Our farm consists of approximately 70 acres of grapes, including some substantial plantings that are among the earliest Viniferas planted in Ontario. Decades of experience acquired by John Watson is being passed down to his son Kevin who continues to add new plantings in response to industry and customer demands, including eight acres close to the Niagara Parkway planted with red Viniferas. Our white grapes are slowly pressed in our newly constructed press-house, and the juice is then cold-settled to remove any solid particles. It is then racked off into 23 litre pails and stored at 0°C (degrees Celsius) to ensure freshness. Red grapes are crused and stored in 50 lb. pails so that primary fermentation can extract all the colour and tannins from the skins. For those smitten by Icewine, try making it yourself. Place an order for this "cold gold" and wait for January's frigid temperatures to provide the harvest envied the world over. Remember to order everything early! Many customers leave their order with us for the following year when they pick up their juice in the Fall, and the Spring is certainly not too early to contact us. Watson's juice is in demand.
